Who says simple quick dishes are not tasty?
Let me prove you wrong with this effortless Vegan Udon Bowl!
It’s simply easy and delicious and can be done in just 15 minutes.

It’s basically preparing the ingredients and boiling it down with some ready-made tsuyu.
And what exactly is tsuyu?
It is a dipping sauce made of mirin, soy sauce and dashi.

And what exactly is mirin and dashi?
is a sweet cooking wine very similar to sake but with lower alcohol content and higher sugar level. Dashi is a stock made using kelp (kombu) or/and dried bonito flakes (katsuobushi) and water.

Most Japanese as far as I know make their own dashi or tsuyu but if you’re new to Japanese cooking, what you can do is buy ready made ones sold in your local supermarket at the Japanese food corner section.
I am sure you will find tsuyu or dashi in a glass bottle.

So in this recipe, since it’s a 15 minute dish I’m using the kombu tsuyu sauce I got from my local supermarket.

As for the rest of the ingredients, I’ll list it down below along with a video on “how to make” so do check it out if you wanna try it out.

I’m not exactly cooking the authentic Japanese Udon Bowl here but just a version of mine which I think is delicious. I just love experimenting food and most of the time with the leftover ingredients. But, I used to cook this a lot when I was studying in Japan during my university days. That is where I learn a two about Japanese cooking.

So now I am back and on my busy days, I still cook this to reminisce the good old days back in Japan. I have also started to explore on other recipes too and on and off I’ll post it up here to share with you guys.

Easy 15-minute Vegan Udon Bowl

*1 serving

  • 1 pack of Udon noodles
  • 250mL water
  • 50mL kombu tsuyu
  • 1 cup bok choy
  • 1 tbsp of sliced onion
  • 1/4 cup shiitake mushrooms
  • 1 tbsp scallions

How To Cook

  1. Add 250mL of water in a pot and bring it to a boil.
  2. Add in kombu tsuyu, bok choy, and sliced onion and allow it to boil for 5 minutes until the vegetables are soft.
  3. Then, put in the udon followed by the shiitake mushrooms.
  4. Let it boil for another 2~3 minute and serve with scallions on top.
